Passata sauce, no additives and organic if possible - 690gm Jar
1 Onion diced
1 clove garlic chopped
½ cup herbs like thyme/parsley o basil
2 tbs olive oil
500gm block tofu medium/firm, broken up by hand
10 dates pitted dried
1 cup mushrooms (optional)
30 gm nutritional yeast.
6 small zucchini -zoodles / or ½ cup cooked gluten free pasta
Salt and cracked black pepper, 1 tsp of each or to taste.
Heat olive oil in a pan, saute onion and garlic until tender, add mushrooms and brown a little. Add passata sauce tofu, dates and simmer on low for 10 minutes. Season with salt and pepper.
If you have a zucchini spiralizer then use one small zucchini per serve, the heat in the bolognaise is enough, you do not need to cook the zucchini separately. Alternatively cook some gluten free pasta.
Top with nutritional yeast! Yum!!
