Sweet Potato Granola Bars

Preparation time: 15 minutes                                                    Servings: 16

Cooking time: 1 hour for the sweet potato.  30 minutes for the slice. Pre-heat oven 180 degrees.

Step 1:

600gm Cooked Sweet Potato

65ml Coconut oil

6 Tbs 100% Maple syrup

Blend these together.


Step 2:

In a bowl place:

2 Cups Oats (organic/gluten free is best)

50gm Goji berries

100gm Organic sultanas

100gm Pitted dates chopped

70gm Coconut desiccated

2 tsp Cinnamon

2 Scoops Vegan Protein

Step 3:

Mix 1 and 2 together and press out onto a tray lined with baking paper. Once baked and cool, cut into 16 even pieces.
