Granola Fruit Yoghurt

Preparation time: 5 minutes Servings: 4

Cooking time: 20 minutes Pre-heat oven 180 degrees.

Step 1:

4 Sweet potato granola bars

Take 4 Sweet potato granola bars and break them up roughly onto a paper lined tray. Bake

for 20 minutes or until golden and crispy. Allow to cool and blend very briefly just to break

up a little.

Step 2:

160gm Coconut Yoghurt

2 Ripe Mangoes / frozen pieces mango.

Separate Granola into 4 containers. When you are ready to eat – or on the day you will eat,

add 2 Tbs coconut yoghurt to granola (this yoghurt is very easy to make – but you can buy it

unsweetened). Cut Mango cheeks off and remove flesh with a large spoon, add one sliced

mango cheek each to your granola. Eat!!

Depending on where you get your mangoes from and if you make your own yoghurt, you are

looking at around $3.00 per serving.
